For over 5 generations, we at Morelli Pasta have been slowly drying and bronze-die cutting our pasta using traditional recipes. Founded in 1860, the ancient Morelli Pasta Factory is a fifth-generation family business that produces a vast range of specialties, all free of preservatives and coloring agents. The result is truly wholesome pasta, with a wonderfully rich flavor and full consistency.

What sets our products apart? We reincorporate the wheat germ into the semolina of some of our pasta, giving it a unique taste and a wonderful aroma. We specialize in classical regional pasta as well as more innovative flavored varieties, using only the finest Tuscan or Italian wheat to ensure the highest quality.

Our artisanal pasta-making process involves slow mixing and the use of bronze dies to cut the pasta, ensuring a perfect consistency. The drying process is also done slowly and at a low temperature, taking at least 36 hours to complete.
