What makes Morelli Pasta unique is the reincorporation of the wheat germ into the semolina of some of their pasta, giving it a unique taste and aroma. The artisanal process used by Morelli Pasta involves slow mixing and the use of bronze dies to cut the pasta, which gives it a perfect consistency. The drying process is also slow and low, lasting at least 36 hours.

Morelli's gluten-free pasta is wheat-free and has the flavor of homemade pasta, but is made with rice and corn flour or only corn flour. This pasta is rich in vitamins A and E, low in fat, cholesterol, and sodium, with a characteristic golden color coming from the corn flour and its natural carotenes.

The rice and corn pasta has a delicate and gentle taste, making it a great gourmet wheat-free option for those on gluten-free diets. The linguine is made with only organic corn flour, while the paccheri and calamari are made with organic rice and corn flour.
